Bananananananananana Bread

bananaMany of you know that I have acquired some fun-loving food allergies and sensitivities lately. I know that you know this because 98% of my readers are named “Carrigan”, “Horton”, or have been adopted into one of these families.  These new discoveries have pushed me into a lifestyle where I must control more and more of my food and rely less on convenience food or even store-bought food.  Out of necessity, I’ve started to bake alot more, and those of you who bear the name Carrigan or Horton, know that I hav’nt forgiven you yet for eating all my Rice Krispie treats when you had a refrigerator full of cakes, pies, and cheese covered food to eat.  =)

Anyways, for those of you who gleefully and ignorantly eat all types of food or those of you who suffer  food allergies like me, I found a great recipe for banana bread that I thought I would share.  (If you don’t do wheat, then I”m truly sorry.)  I found this recipe on the side of a bag of too-ripe bananas that I bought at the grocery store, and it has not failed me yet.

Bonnie’s Banana Bag Banana Bread

8        T     Butter at room temperature        ( Dairy-free: I used 7 and a half   T of coconut oil, melt in microwave)

3/4   c    Sugar

2               Eggs

1        c     All-purpose flour

1        t      Baking soda

1/2   t      Salt

1        c      Whole wheat flour    (You can get this at bread bakeries like Great Harvest, keep it in the freezer)

3                Large ripe bananas, mashed    ( 4 bananas will make it more moist)

1        t       Vanilla

Preheat oven to 350 degrees. Grease 9x5x3 bread pan. Cream butter and sugar until light and fluffy. ( I use the Kitchen Aid mixer for this)  Add eggs one at a time, beating well for each addition. In a separate bowl, mix all-purpose flour, baking soda, salt, and whole wheat flour.  Add dry ingredients to butter/sugar/egg mixture, mixing well.  In a separate bowl, mash bananas and add vanilla (I add a little bit more vanilla).  Add banana mixture to batter. (Fold it in if you can, but the Kitchen Aid or a hand mixer works fine). Pour mixture into greased bread pan and bake 50 min or until inside is cooked (toothpick comes out clean). Cool in pan for 10 min, then cool on rack.  Makes one loaf.

Enjoy…..or if you are Apryl, then come over and eat some that I just baked.
